This week Taco Tuesday had a different spin, thanks to the rainy tropical chill in the air. ☔️🌴
I mixed up this family favorite instead of our usual Wahoo Tacos…
Tortilla/Taco Soup in the Vitamix
INGREDIENTS:
• 1 Tbsp Organic Chicken Better than Bouillon
• 4 cups boiling water
• 1-2 Grilled or baked taco seasoned chicken breasts or get a rotisserie chicken and pull of meat
• 1 Celery Stock
• 1 Large Tomato
• 1 large carrot or 7 baby carrots
• 1/4 zucchini
• Flavor God Taco Tuesday seasoning (or preferred taco seasoning)
• 1 clove Garlic
• 1st outer layer of a peeled yellow onion
• Pink Himalayan Sea Salt
• 1 cup organic frozen corn
• organic black beans (optional)
• 1 avocado sliced (optional)
DIRECTIONS:
Season & Grill or Baked Chicken breasts. Once cooked slice into chunks set aside
Boil water and add 1 TBSP of Chicken Better than Bouillon
In Vitamix add tomato, celery, carrots, zucchini, garlic, onion
Pour in boiling water/better than Bouillon mix into the Vitamix, add taco seasoning and sea salt to taste (approximately 2 tsps of each)
Blend
Once contents is liquified stop blending. Add in optional chicken and blitz to Shred Chicken, being careful not to liquify. Add optional corn, black beans, and avocado. DO NOT BLEND leave whole.
(OPTIONAL… May top with cheese, Mimced Cilantro, and/or crumbled tortilla chips)
Serve into bowls and enjoy!
